I personally like the Apple Macbook. The cheapest one is still great!
You can do everything you need, including photos and video. Then buy the student - teacher edition of Office and you're set!
A little more expensive than the cheapest PC laptop, but you won't regret it. I have 3 different ones for business and home, and never have any problems with them. No crashes, no viruses, easier to use, and they work very fast. Built in camera is a nice feature and if you really need to, you can run XP or Vista too.

Check with your college's bookstore to see what the people working in the computer area recommend. Cal Poly SLO recommended a Dell because the college's computer lab helpers knew it best and were better able to help the students. Also, Dell gave great one-time deals to students. If I remember correctly, there was something we picked up at the college to get the great price.
