Lent is considered a time of penance for us. Not eating meat of Friday is considered an act of penance. Here is some more info that I pulled off of a Catholic website:

"Not eating fish on Fridays, year round, was once an act of penance observed universally. Unfortunately, it didn't fit every culture -- some are virtually vegetarian or perhaps meat is so expensive that not eating meat on Fridays has no meaning. And of course, the act would have no meaning if one was a vegetarian.

Since Vatican II, we are called to choose for ourselves, individually, an act of penance. So, the obligation to perform a penitential act every Friday, year round, remains though no specific act is determined. You'd be surprised how few Catholics are aware of this prescription.

Of course, during Lent, no meat is eaten on Ash Wednesday or on Fridays. This allows the universal Church to observe a universal act of penance during the holy season of Lent."

Meat is something that they give up for lent. So they eat fish. Some people also give up something else for the forty days. My grandfather would give up beer.

This is because of the strong Christian symbolism Fish bears. That is why it is customary to eat fish in place of meat.
