Alchemist work with attempting to change the chemical composition of substances, they existed, probably still do. They are most famous for trying to create gold out of base metals like lead, also out of other things including urine. They weren't sucessful at creating gold.

Alchemy, historically, was a practice of experimenting with materials in the hope of being able to transform one substance into another - most famously trying to turn lead into gold, but there were many other 'transformations' some of which appeared to actually work. (Most of these involved chemical reactions which we understand now but which seemed miraculous at the time.) Although the famous 'lead into gold' trick never really worked, alchemists did lay the foundations of modern chemistry. So, the people were real but the most sought after goal turned out to be mythical.
