I am trying to impress this girl with some chinese information.

Is she Chinese nationally or is she Chinese-American? If she's Chinese-American, then don't make the mistake of trying to flatter her by taking interest in a culture that isn't hers. I've been to China, and we aren't like the Chinese from there. Ours is a co-culture quite different from theirs, actually, it's more similar to white-American culture in it's etiquette.
When someone tells me they love asian girls, I get put off and a little mad. Nobody wants to be placed in a box, with their personality and characteristics ignored. It's like telling her, "you're asian, you know how to cook rice."
Instead, focus of her as an individual. Tell her she has a pretty smile, that you love her sense of humor, or whatever quirks that make her different, mainly different from other asian girls.

Fireworks are very important in Chinese culture...you can hear load banging at early hours in the morning for anything: - a new shop opening - a marriage - a birth - a death - entering a new home - before decorating a new home Fireworks/ crackers go crazy during Chinese New Year and can be heard throughout the day for over 2 weeks! This is done to scare and ward off ghosts and any evil spirits that may be lurking around.

The Chinese respect their elders and are very family oriented.
They celebrate Chinese new year which just occurred on February 18 and this year is the year of the Boar. In urban cities such as Philadelphia or New York there are Chinatowns where the Chinese celebrate with food and firecrackers and spending time with family. Thus before the new year starts the older generation will actually clean their houses and make sure everything is neat and tidy for the new year. In addition children and unmarried individuals receive money wrapped in red envelopes emossed with gold lettering. This is called lucky money.
