That's beaver TAIL, and it's not just Canadians that eat it.

The person you were speaking to was probably making fun. We do not eat the tails (or any other parts) of beavers. There is however a type of pastry called a beaver tail which is especially popular in the winter in Ottawa.

I hope your friend is a liscensed trapper or native because they are the only ones allowed to trap beaver. I don't know where you get your info from but I don't eat beaver tails you can't buy them at any grocer or store. As a matter of fact outside of the liscence trapers and Natives any other hunting of these creatures is totally illegal.
