Outlook Express is not critical to Windows and can be removed without problem. (Unlike Internet Explorer -- which is used in things like Windows Update and File Explorer and could cause problems if completely removed. There is a way to uninstall Internet Explorer while leaving the core 'Engine' files intact, but I won't get into that).

When you say 'update problems', I assume you mean you have removed OE and Automatic Update is giving you an error that certain updates couldn't be installed. Unfortunately it won't give up trying to install these, and you have to disable them manually. Click the yellow "Badge" icon in the tray to start update. Then hit Custom Install, uncheck the failed updates, and hit close. Then check the box that says "Don't notify me about these updates again" and hit OK.. Thats it!

Well, you won't be able to use Outlook Express. Other than that, nothing.
