Make sure you clean every drop off the sink, or you will have a spot there forever. Run lots of water, and if you get a clog, pour something acidic down the drain (ie lemon juice or vinegar) it will dissolve the mortar if it is still wet b/c it will react with the lime.

NO,NO,NO even if you can manage to keep the trap under your sink flushed clean the mortar and grout will settle in the bottom of your sewer line and harden(on top of everything else that you've flushed down there over the years), trust me do it outside, or run the risk of plugging your sewer,NB my sewer crew runs at about 600 dollars an hour,it might not happen now but you could be contributing to a problem in the future, the same goes for grease DENTAL FLOSS(THE WORST) paint, especially oil paint, stucco, even abraisive hand cleaners

I wouldn't the debris in the mortar and/or grout will probably just collect in your trap, making the drain more susceptible to clogging. Why not just rinse them outside with a garden hose.

I would not do that. You run the risk of clogging up the sink p-trap with the material. I recommend cleaning them with a garden hose outside or in a 5 gallon bucket and dump outside.

Yes as long as you let water run for awhile after. Actually the grit will help clean out the drain
