Why is is when we use to put a cheap bottle of vodka in the freezer it would not freeze, but after taking it out of the freezer and opening it, it would be frozen 5 minuets later.

Im not sure about the chemistry of the problem, you might get a better idea if you watch this sweet video at break.com of a guy taking a bottle of corona out of the freezer. He taps it on the counter and it instantly freezes it seconds

Going by this video, I would say taping disrupts the fluid and allows the water molecules to "find" each other and form bonds... just a stab in the dark.
