What's your topic? You can do something that coordinates with that. For example, if it's related to lightening, make the board black and the letters yellow and put a lightning bolt in the background.
Otherwise, I like these color schemes:
White board/blue lettering
White board/rainbow - Paint different colored splotches of color on your board, ie. blue splotch for Background, red splotch for Materials, and past the information inside the splotches.
White board/black
Remember, everything matches with white!
Also, I would reccomend doing some type of layering with the construction paper and the headings; you can do this by putting, say, your desired color paper on the board, a smaller white paper on top of that, and then your actual material. Shift the paper, put it in circles. Depending on what you like best, you can also use felt, aluminum foil, or fabric for ths construction paper.

Change the display board from white to black and make all of the lettering white. You will stand out.

If you are going to stick with a white background. I'd do red or blue, something that stands out and is noticed. If you can change, I'd do as the previous person suggested. a black background with white lettering would really make a statement.
Good Luck!!

It depends what your science fair is about but i would suggest using colours/patterns that reflect the project. However I would not use too many colours or patterns as its very distracting for people to concentrate and read.
The examples for your colours and patterns you could do are:-
if about nature what about doing the lettering in forest type patterns
if about animals use the animals themselves for lettering or use the shape of the animal to make the letter.
if doing about biology whatabout using the dna double helix as a background
the list goes on don't limit yourself to paper for colour what about other textiles such as fabric, wood, tins, etc
good luck

you can make the title any color you want, like you can do cool word art on the computer and its blends colors. then you can make teh construction paaper all different colors.
or, you can make a theme according to your project. like, i did a sci fair on what type of wood burns the fastest, and i did the title yellow and red and the con. paper all yellow. my background was a fireplace though, so i had to use certain colors so they stood out.

I agree with changing your main color to black, but you could also use neon colors for headings and titles to really stand out.
