I read somewhere that Easter is determined according to the first full moon after the vernal equinox, or spring. That makes sense as to why it moves round between March and April.
As others indicated, apparently it is a part of the old pagan holdover thing.

Usually this has to do with the Jewish Passover which is in tune with the vernal equinox.(1st Day of Spring.) and the first full moon after the vernal equinox is passover. Good Friday therefore would for the most part be the Friday after the Jewish passover feast.
