Interesting question. A microwave oven works in the way that high-frequency electromagnetic waves penetrate food, causing its molecules to vibrate and generating heat within the food to cook it in a very short time. The kernels in a poccorn pack are sealed in a trifold style bag in order for the pouch to unfold and inflate and create even more hot air within the bag. That constant hot air that circulates inside the bag inside the microwave is the prime source for popping the kernels into popcorn. Whenever you open the microwave the air stops deflating the bag and stops the process. The heat needs to restart and some kernels can no longer pop properly. A good way to ensure good popcorn is face the bags flaps right side up with the flat surface laying flat on the tray. Set the timer to 90 seconds on med-high to high. Listen for constant popping then stop the microwave by opening the door as the popping decreases in tempo. Otherwise,as you know you will have black smokey popcorn! Have fun!

Popcorn needs to be heated quickly so that the water inside turns to steam quickly enough to pop the kernel.

This is tricky, because if you add heat *too* fast, the kernels don't pop very big.

You can restart the timer right away and and should get good results, but you need to listen and turn it off when most of the kernels are popped. Else you'll burn it.

After 40 years, I've learned this method. For best results. I use a big pot on a range. When the canola oil *just starts to smoke*, add the popcorn. Then keep the heat as high as it will go. Buy good popping corn for best results.

Because the buttery kernels need constant constant heat only rising in temperature to cook it. If heat is instantly taken away, then the buttery kernels instantly start the cool-down process as you are fiddling to give it more heat. That is why, the best popped popcorn used to be the ones you would heat on a gas burner stove like in the 70´s. Constant heat, yet YOU can decide when you want to take it off. Just keep the microwave on high high heat and set for atleast 8 minutes. That will guarantee only the highest energy being put into the popping process, and when YOU know it´s done, just turn the microwave back to 0 and let cool down and enjoy. Love and Respect.
