"Carreer Opportunities" has the night stocker and the General Manager's daughter thwarting thieves in a Target store after hours. It starred Jennifer Conley as the girl.
"The Blues Brothers" featured Jake & Elwood driving through a shopping mall while chased by police but that was 25 years ago.
"Back By Midnight" starred Rodney Dangerfield as a prison warden who turns the cons loose to rob local stores to get needed equipment. The stores are owned by the company that operates the prison. The movie was made just before Dangerfield died.
