1. Some form of bacteria: can survive in extremely cold or extremely hot places like the thermo vents in the under sea volcano as well as the freezing, icy antarctica.

2. Water Bear: A bacteria sized creature that is so hardy that, when left in a vacuum, it can survive in that Environment! Absolutely amazing but it is true. Even if not given water for a long time (water bear is an aquatic critter), it will roll up its numerous legs to curl into a small ball, then hibernate patiently until water reappears. They can go without water for a very very long time, even up to several month.

Faster breeding species are more likely to fare better in the advent of rapid environmental change. Those species that can live on a number of different food sources also. Basically anything that doesn't put all it's eggs in one basket so to speak. Scavengers such as pigeons and rats or cockroaches do very well in this department. Cockroaches are purportedly the only species that would survive an all out nuclear holocaust...

Rats are one of those...because they reproduce rapidly and the next generation will have the strongest and most adapted to their environment. Although the Crocodile is said to be one of those that haven't change (biologically speaking) for a while so depend what you mean by "adaptation level"

humans are pretty good at that, depending on what you mean by 'adaptation'. Our culture allows us to rapidly adapt to a wide variety of environments.

Of course if you mean specifically an evolutionary genetic change, then we would be slow due to long generation time as mentioned above.
