They are so completely different, that it really depends on what you are looking for in a city. Personally, I don't like NYC. "Great place to visit, wouldn't want to live there" type of thing. Same with LA. They are just too big and have too much crime for me. And the cost of living is outrageous. Cities that just don't sleep are great, except I really enjoy sleeping.
Seattle I personally really like but my husband said he couldn't stand. I think after a year or so, the rain everyday might get old real quick. But it is tied with Chicago to me.
San Fran and Chicago are nice sized cities and offer TONS of things. All the food choices you can imagine. Professional sports, museums. I found San Fran to be so beautiful. Ok yes it has a large prominent gay population. So does Miami. I don't understand how that would bother you but if it does that you should knock that choice out. It's a gorgeous city though and very hilly. Close to the beach and the mountains. But very expensive to live in. I don't know that I could handle the excessive cold in Chicago though. A bit too much lake-effect snow for me. But great museums and passion about their sports teams.
I'm Southern though so I have to say my favorite on that list is Nashville. It still maintains a small city feel, even though it's rather large. Their hockey team is doing great this year too. It also has the best cost of living on that list as well.
But no person who likes living in Seattle could like LA just as well and same with NYC and Nashville. It's just too different. You either like hustle of big city or you like outdoorsy casual. Though due to cost of living, city size, weather and general atmosphere, I'd rate them in this order.
1- Nashville
2- San Fran
3-Seattle/Chicago
4-Chicago/Seattle
5-NYC
6-LA

San Francisico is not only for gays. It is quite expensive to live in by any standard you can dream up. There are many things to do there and it is close to many places such as Silicon Valley and the wine growing areas of Napa, Sonoma, Livermore valley etc. Lake Tahoe is a 3 hour drive away for skiing and casinos. Monterey Bay is a little closer. There is no limit to the recreational activities you can take advantage of. Remember that it is a very liberal and civilized city and rigid irrational attitudes are not tolerated. Public transportation is excellent so you can live in the city without a car. As a matter of fact owning a car could be quite a headache as parking is limited and ridculously expensive. As Henny Youngman once said he found a guy lying on the street, Thinking he was in distress he went to help him. The guy told him he was OK. He had just found a parking space so he sent his wife out to buy a car!
Seattle is not bad. As far as San Francisco is concerned L. A. is a foreign country, nice to visit but ...
Chicago is cold and polarized. You have black neighborhoods, Polish neighborhoods, Italian neighborhodds, Lationo neighborhoods etc. so you can find yourself quite a stranger to be viewed with suspicion if you happen to turn down the wrong street. The Bay Area is a microcosm of the world and yes all ethnic groups get along just fine.

If you are looking for affordability, you can skip Los Angeles. California can be a very expensive place to live. I would personally recommend Memphis, TN. The entertainment and night life there is great and abundant. There are so many things to do and the Amtrak train goes directly north to Chicago in a day, so it is easy to plan a weekend trip for a change. It is a larger city, so you should not have a problem finding a job and the living is more affordable than the vacation-type cities that you asked about. Out of the ones that you provided, I would choose San Antonio. There is lots to do and Texas offers some very affordable living. We lived in Texas and found it much more afforable to live than California.

I will put those cities in order:
1. Seattle
2. Chicago/San Francisco (tied for second - SF is just as expensive as NYC though)
3. New York City
4. Nashville (definitely the least expensive of the cities you mentioned)
5. Los Angeles is by far one of the WORST cities to live in

Well that is all a matter of opinion. You need to define what you are looking for. Just prices or quality of life or something else. Like country music and a heck of a nightlife - Nashville. Like hustle and bustle? the go the Chicago , NYC or LA option.

I've never been to Seattle but heard that it's nice. I live in NYC and hate it. It's dirty and crowded. I would never recommend anyone to move here.

Chicago sucks, who the hell wants freezing winters and hot humid summers. It's flat, there are no hills or mountains and the people there are fat.
