HMS stands for "Her Majesty's Ship" in the British Royal Navy under the Queen of England. If and when Prince Charles ascends to the throne (I mean the "royal throne", not the other one), it will mean "His Majesty's Ship".

If the US had a monarchy, we'd probably use "HHMS" as in "His or Her Majesty's Ship"
