Basically, I want to know what different sizes will fit a truck I am purchasing. The truck sits a little lower than I would like. So I want to put taller tires on it. However, I'm not sure how large I can go before they wouldn't fit. Is there anywhere online that will show what different sizes I can put on my vehicle without the tire rubbing against the wheel housing or should I just wait until I speak with my salesman?

I'd speak to a salesman. If it's a popular model of truck then they might give you an answer right over the phone. If not then you'll have to come in.

Otherwise a good tire shop will probably know.
