Cannoli consist of tube-shaped shells of fried pastry dough, filled with a sweet, creamy filling usually containing sweetened ricotta cheese (or occasionally, but less traditionally, mascarpone) blended with some combination of vanilla, chocolate, pistachio, Marsala wine, rosewater or other flavorings.
