although the cats are most likely to blame for knocking the cage over,if they ate the hammy there would be evidence of that, because a cat wont swallow whole, there would be blood, and bits of hammy.
so look in and under everything and in everything, under the bed, sofa,in shoes, closets, laundry baskey, any dark spots, etc
put a blob of peanut butter on a plate with a sprinkle of her food, the smell may coax her out of hiding.

because i have two cats and a hammy, she can be out loose and they wont bother her, they will fallow her around the house,my one cat was asleep on the couch, and i put her on the couch, she walked over to kitty and burrowed herself into his fur and went to sleep.

wow, uh, your in a bit of a pickle, there.
if the cat did indeed eat the hammy, then there ya go, hes dead.
but if the hamster had some luck that day and got away from ur cat lock up the cat in a cage and put him on a table so theres no way for him to catch the hamster (assuming hes alive).
leave the cat in the cage, cuz hamsters can get ANYWHERE and if u put the cat in a room, the hamster will get there,
if the hamster doenst show up for 3 days, hes dead and you can let the cat go.

Try searching in your closet or some place dark. He is more than likely in there hiding. When my children's hamsters get out, they are usually found in the closets.
