No convertible has a really sizable rear seat. Unless you have the means to get a Rolls-Royce or Bently.
The largest car I know of doing converts are Chrysler Sebring and Chrysler PT Cruiser convertible.
PT would be best bet.

PT Cruiser has a great rear seat, but the convertible versions of mainstream sedans, such as Toyota Solara, Pontiac G6, Chrysler Sebring, aren't bad either.

Pontiac G6 convert or Audi A4. If you wait Chrysler might be bringing a 300C convert which would be big. It might take a while with the GM merger talks.
