What you are thinking of is formaldehyde. You can get that from biological supply houses or possibly a farmers co-op.

If you wish to keep a dead fish, you may have more of a problem than how to keep it. Give him a proper burial in a nice place in your yard and get yourself a new fish so you can move on. Losing pets you love is always hard but it's one of the things in life we must live with. I think you should get another to take your mind of him.

Formaldehyde seriously alters the structure of proteins, for it is a
strong "tanning" agent. That renders any specimen useless for modern genetic analysis (DNA comparisons, for example). Some alcohols may also do some damage (methanol comes to mind). My preference would be undenatured ethanol, but it is just ridiculously difficult to get or keep because of the ATF. Propanol-2 (isopropyl) alcohol is pretty good,AFAIK, and should be easy to buy and keep without tons of paperwork, storage locks, etc.
Some cheap rubbing alcohol may work, but it might contain lanolin or other emollients, so watch it. Technical grade Propanol-2 is probably a bit safer.

If you love him that much, head to your local taxidermist. They will tell you to freeze your fish in water then bring him in.
It costs roughly $10 per inch to have them preserved. Even if it is to "keep him in a jar or acrylic pour". They can do wonders for fish.
they have all the chemicals and acrylics to do this for you.
