Turn them five times daily. An uneven number results in a different side of the egg resting downwards each night, which is healthier for the chick.

Good luck.

Edit: While I realize a LOT of people are saying once a day is fine, the recommendation is up to six times a day. Eggs will hatch even if they aren't turned properly, but the chicks will come out weak. Turning the egg is actually a way to get the little chick inside the egg to move around and build up it's little muscles. Oh, yeah, stop turning eggs when they are around three days from hatching (when you can hear them peeping through the shell is a good indication).

The chickens themselves normally turn the eggs so you need to do the same thing: Turn the eggs 2 times a day up to the 18th day stop after that because the chicklette outta be formed and they don't need to be turned after that point. Check out the website I posted...My parents used to incubated quail eggs, sooo cute those little chicklettes. Good Luck

A hen only turns her eggs about once a day. I've incubated hundreds of eggs and only turned them once daily. They all have come out fine and healthy.
