Led Zeppelin's "The Ocean" off of Houses of the Holy alternates 4/4,7/8. Also "The Crunge" on the same album is in 11/8 I think.

I know one of the sections of TJ Kirk's "Get on the Good Foot/Rock Hard in a Funky Place" off of If Four Was One is also in 11/8.

I don't know if you can count it but the Allman Brothers did a 6/8 (if 6/4 counts, so should 6/8) tune on Live at the Fillmore East called "Hot 'Lanta. Cool jam tune.

Of course, Return to Forever's Hymn of the Seventh Galaxy is all over the place.

If you want to talk Modern Jazz, there is no better place to start than the Dave Brubeck Quartet's "Take Five" and "Blue Rondo a la Turk" off of Take Five.

"Pyramid Song" by Radiohead seems to constantly shift from 7/8 to 3/4 and back again. I also suggest Sufjan Stevens: "Dear Mr. Supercomputer" is in 7/8 and many of his songs are in 5/4.

What about Time by Pink Floyd? I've never been able to put a finger on the signature, but it's interesting.
