Gopher - go for (go fer) this, go for that (and errand person or floater)

A gopher gets things for people. The "go for" things. If a judge needs a bag of potato chips, you go for her and get them.

A Paddock Helper will help around the stable. If may be sweeping the floors. It may be holding a horse's tail while the owner/shower grooms him.

A tabulator counts and tallies something. It may be points and votes for the show. It may be show fees. I'm not sure what exactly it would mean in this circumstance, but you will surely be counting something.

A gopher is a runner, or errand girl. A paddock helper, I believe, is someone helping out in a warm up ring or entry gate areas. A tabulator - not sure on this one - may be involved in tallying judges scores.
