Some types of bacteria are killed by being heated to 150°C for 30 minutes. Explain why they could be killed in a pressure cooker, but not in boiling water in an open pan.

In a pressure cooker, water can be heated to well above its normal boiling point of 100C. In an open pan, 100C is the highest temperature that you can achieve.
