I remember studying this in Sociology class. It's just to be courteous and to not to appear rude or snobbish. Yet, if you walk by them again a short time later, you are likely to say nothing since they were acknowledged once. A sincere smile will usually do if this happens. If I walk by the same person a little bit later, I will simply say their name in a pleasing tone(to acknowledge them again) and this is courteous and pleasing to the other person as well...There were certain terms we learned that described this, yet I can't remember what they were exactly.

Non verbal communication. We acknowledge someone who is not an enemy and in turn let them know we are not an enemy.
