The reconstructed Jamestown in Virginia is as authentic as you can get. There are remnants of the colonial site at Yorktown, Virginia that are worth visiting. And of course Colonial Williamsburg, also in Virginia, is a delightful place to visit.

think colonisation went out of fashion in the 19th century after the europeans ran out of countries to take over, so probably not a good career move.
