That is often one of the reasons that many people choose a career in geology. precisely how much of your workload will be desk or lab versus field depends on your eventual job. You do have a certain amount of control over what type of job you will accept. There are plenty of jobs with a very high field component. Plenty that have a very low field component as well. and plenty with a good balanced mix. You might be interested in research-type work where you have some input on the amount of each that you do. If you like fieldwork, become very good at identifying and understanding field relationships (structure and striatigraphy) rather than aspects that are lab or equipment-intensive (geochemistry or geophysics). Go to a school that has a good program for applied geology rather than one better known for theoretical geology. many (but not all) canadian schools are more field oriented than their US counterparts, as an example, has been my observation.
