To see all of Disney, you would probably need two weeks, at least, and even then probably couldn't see it all.

As the other answer said, staying in one park is going to get you the most in one day. So, pick the park that offers the most to you, EPCOT and Magic Kingdom are the biggest, but can also be the busiest, so wait times may be longer. If you will be going with any older crowd, like teens and up, then EPCOT would probably be the best choice, more exciting rides, in my opinion and a ton of see, with a lot of great dining options. Magic Kingdom is also great, but is a little more popular for younger kids, but still fun for just about any age.

Animal Kingdom and MGM are also great, but most people don't need to spend a whole day there, so you probably wouldn't get the most for your money.

Be sure to use Fastpass and only use them when it is a really long wait. If the wait is around 15 to 20 minutes, then you should save the Fastpass for something a little longer. Fastpass is a big time saver, if you use it efficently.

Also, be sure to go as soon as the park opens and stay till they kick you out ;-)

Other than that, just have a blast!

One day is not enough to cover the entire Disney property.

If you only have one day then pick on park to go to and spend all day there exploring.

The two best choices are Magic Kingdom or Epcot.

I prefer Epcot for the variety of food avaialable and the night time laser shows on the lake I think are better than the parade on Main Street in the Magic Kingdom.

Either way you will have a fun trip.
