Cookies are little files on your hard drive that track which web sites you view. The web site stores info about you on the Cookie and can tell each time you visit the site.

Cookies are data that websites store on your computer. Basically, they're variables that are stored on your side of the website.

There are two types of variables that a webpage can use that can be stored and used again on other pages: sessions and cookies.

Sessions are temporary variables that are usually stored serverside or in the url (IE pages that have whatever.php?hello=myfriend).

Cookies are variables that are stored ON your computer for later use.

An example of use for these would be remaining logged in to Yahoo! Answers. A cookie could be stored on your computer that contains your [encrypted] password or username. The site would then check whether or not the cookie exists; if it does, it checks the password stored inside. If the password were to match, you could remain logged in. (Note that I'm not saying this is how Y!A works, it's just an example)
