The Four Seasons has a 4 Star restaurant and a wonderful spa. Only 5 blocks to 6th Street. It's the only place downtown that fits ALL of your criteria.

The Omni downtown is nice...also the DoubleTree is nice too...
but if you really want to do it in style have it at the Barton Creek Country Club
If you want to be close to 6th street then The Omni is your best bet....another option is the The Driskill Hotel...that place is a nice old hotel or The Four Seasons
