they are all good but it all depends on the cooling system and what the parts are made of. some "require" that you use coolant, (or a coolant\water mix) but if i had a choice i would ditch water cooling because of the emormous pain in the @$$ that they create.

Distilled water and de-ionised water are effectively the same. They're clean and without contaminants.
What do you mean by coolant? Anything that "cools" is a "coolant", there's nothing special of that name.
