Try making Beef Enchiladas

1 pound lean ground beef
1 small onion, chopped
1 (1.5 ounce) package dry enchilada sauce mix
10 (10 inch) flour tortillas
2 cups shredded Cheddar cheese
1 (2.25 ounce) can sliced black olives, drained

Preheat oven to 350 degrees F (175 degrees C). In a medium skillet over medium high heat, cook the ground beef and onion until beef is evenly browned and onion is tender.
Prepare the enchilada sauce according to package directions. Pour 1/4 cup of the sauce into the bottom of a 9x13 inch baking dish.
On each flour tortilla, place an equal portion of the ground beef mixture and about 1 ounce of Cheddar cheese, reserving at least 1/2 cup of cheese. Then tightly roll the tortillas and place seam side down in the baking dish.
Pour the remaining sauce over the top of the enchiladas and sprinkle with the remaining cheese and olives.
Bake in a preheated oven for 20 minutes, or until the sauce is bubbly and cheese is thoroughly melted.

Open-faced hamburgers - they're easy!!

Mix meat with shredded cheese & chopped onion. Make very, very thin patties about 3/4 inch bigger than the bun. Place patties on half of a bun and broil until done. Be careful, though, if patties are too thick, they'll burn outside before inside is done. That's what I'm making.

That was my exact thought yesterday!

I found taco seasoning in my pantry and ended up making Taco Salad. It was actually very tasty. I'm trying to go as low carb as I can, so I just didn't add the nacho chips to my plate but everyone else ate the taco salad the way it's supposed to be served.

Sauté with diced onions, carrots, garlic + ginger, smoked chile powder, roasted cumin seeds, a serrano pepper, chopped tomato, chicken stock, salt pepper and fresh crealings.
Serve ½ ½ over plain rice. and drink some good beer.
Delish! That's what I've done!
P.S. The enchilada recipe sounds like Kraft®/awful!

How about Hamburger gravy?

Fry it up with some onions, add water, thicken, and server over mashed potatoes or toast.

Or a shepards pie.

Meatballs. Add chopped garlic/onions, parsley or basil, an egg and parmesan cheese...roll, brown and throw into a pot of spaghetti or tomato sauce and simmer. Add more parmesan and serve on your fav. pasta.

Quick sloppy joes are a can of chicken gumbo soup (and water) to browned meat, then add lots of ketchup and some mustard, simmer and serve on buns.
