Stripping an interior is a good way to get extra performance. Of course you then have to live with the extra noise as a result. How much extra all depends on how much weight you take out.
Combined with sensible engine mods that work properly you'll do even better.
Avoid the ecotek though, these things can damage your engine, be warned, they are not worth the risk. Manufacturers spend millions getting the fuel/ air ratio properly calculated by the cars ECU. Shoving an ecotek on there will mess up all the ECUs calculations and the wrong air/fuel mixture is a bad thing.

Not much. The Saxo only weighs 950KG anyway, so your best bet is to mod the engine, or even swap it.
However, this requires informing your insurance company, whereas removing trim doesn't, so it may be a cheap way to mod your car. Try dumping the spare wheel and carrying a can of tyre weld.
Take all but the drivers seat out and dump the stereo, heater, leccy windows, central locking etc
Replace the alloys for lighter ones. And if you're really serious then take out your front fogs!

won't make much difference, you cant magically create performance thats just not there, the VTR is slooooooooow, I used to have one, but I did the decent thing and wrapped it round a tree.

how much you going to strip?
Why not try an induction kit, better air filter, carburettor, better spark plugs and leads, maybe an ecotek device; http://www.ecotekplc.com/cb-26p.htm. A good cat back exhaust, it doesn't have to be loud lol!
