A lot of people may disagree with me, but I think the most humane thing to do for you, the dog and the horses is to get an electric collar (this is what they use to train and control police k-9s), or a bark collar if this is the biggest problem. You wouldn't need to use it all the time, just when you're around your horses. If this is an option for you, don't buy a cheap one, buy a good quality one. You also would need to have your dog wear it every day for 10 days without the shock on so he doesn't relate the shock with the collar. You shouldn't need to use the collar forever, just until your dog learns not to annoy your horses. Don't avoid the situation by leaving your dogs at home or locked up.
If you would like more information about the use of either bark or e-collars please feel free to email me.

Would it help to toss her some treats? ("good girl! toss") Maybe she'll distract herself away from her initial motive and get into the habit of getting the treat. If it works, it could lead her away from being so aggressive about it, and closer to her old self.
Or, be with her, and take her around the horse just to hang out, while talking to her, rubbing her, reassuring her.
She's kinda' like a human . . .
