Hungry Ghost as in 'yeow gui' ? Is this the exact word the teacher like to use on your son? Just your son or other student as well?
If the teacher scolds only your son, then you have to probably think why this is so. If the teacher scolds most of the students, then the problem is obviously with the teacher.
If I were you, I will speak to the teacher in person. Did you hear the teacher say that or did you hear from other sources? Verify with the teacher whether he/she said it. Verify but not confront.

A 2 year old in school already? Preschool or something? Calmly and rationally write down what you are going to say to the teacher. Explain that you are very frustrated and you don't know what she wants of your son, he is upset by her calling him a hungry ghost. What does it mean? and what behavior of his causes this reaction in her that the boy can change?

You have some options here. You could examine the reason for the scolding as it may have been necessary as your son may have been misbehaving. You could confront the teacher or the school administrators. If these approaches fail you could summon the Hungry Ghost to the school on a cannibalistic rampage to lay waste to all who have slighted you. Good luck!

Sometimes a teacher will pick out one child to abuse, unfortunately. If this is the case then take your son out of the pre-school, if possible. He is too young to understand her problem and he might develop a hatred for authority figures. If you can't take him out then just have a heart-to-heart talk with her about your concerns. Maybe you are over-reacting. Make sure to tell her how much your son really likes her, and perhaps it will change her heart toward him. Make sure you contribute positive things toward the program. Take in some treats.

When you are angry, just seat and write what you think deeply from your heart, about the special situation. Heart, talks in a way, that when you are sincere, the teacher will be touched; but if it were my son, after writing her a letter with copy to her Director or Supervisor, I will go directly to the Board of Education of your country.
Teaching is sharing knowledge with love, compassion and intelligence. Ask her which of these three she has. You will see.

Just approach the teacher diplomatically and tell her stop calling that nick name to your son. I'll sure she will take it easy with you rather than you approach her superior or the principal. Think about it, don't make a scene out of it.
