How about sweet and sour chicken if you want to stick to chicken? Chinese food is lovely - how about getting a mixed meal for two and both of you share - that way you should be a selection of dishes and can try them out?

Well, a little more information would have been far more helpful. Like where you are located and budget.
Considering this is Yahoo Singapore Answers, i'd talk in the more Singapore context. (Of course if it isn't Singapore, hopefully the food i mention can be found where you are at too.
Going for the local favourites would be Mui fan and Hor Fan (more of the saucy kinds of food, and yes it has chicken)
Fried Kway Teow or Mee Goreng is also tantalising (but if you don't really like the oils and fats...)
If you are going for something you can share with your beau, you could try the Herbal Chicken (wrapped in aluminium foil, drenched with sauce and succulent CHICKEN meat, mhmm.) Well, the portion isn't right for one.
Well, another dish i'd recommend would include claypot chicken (tender chunks of chicken meat), (well trying to limit myself to the chicken dishes...) Maybe if you told which kinds of chicken you prefer broiled, boiled, baked, grilled, fried, steamed... would probably help.
Hope i helped... if those kinds of dishes aren't to your liking i apologize, maybe you'd like to try cooking something for a change ( if you are confident about your culinary skills).

Why not try Peking Duck. This is shredded roast duck and cucumber fingers which you wrap up in little pancakes which you smear with chinese hoisin or plum sauce. Delicious!
Have you tried Chinese Pancake rolls, these contain beanshoots, crunchy vegetables, chicken, pork, shrimps, all deep fried in a crunchy pastry skin. How about Chicken in Black bean (salty & savory) or Garlic and Ginger (hot and aromatic) sauce served with egg fried rice.
You might like to try Vietnamese food. This is similar to Chinese but more delicate and with a French colonial influence.

Try orange chicken , it's breaded like the sweet and sour but the sauce has a hint of orange's in it or General Tso's chicken it's a little bit spiceir and has fresh brocoli with it.

Have you ever tried cantonese Dim Sum?
Its a nice break from the traditional chinese stuff (even though it IS traditional). It consists of a wide choice of combination. It reminds me of Spanish tapas in that you can have a little bit of this and a little bit of that.
Certainly not boring and a great way to try out cuisine from other cultures.

Have you ever had congee? It's sort of like oatmeal porridge. How about pot-stickers? That's a type of dumpling. Yummy. What do you consider "Chinese" food though? Do you have a proper Chinatown in your city, or are you just dealing with take-out style American Chinese food? Peking Duck is very good Chinese food. How about deep-fried tofu?

If I was you, I would try the different kinds of foods that have chicken in the other foods so you know which ones are to your likings since nobody would know what you would like to eat other than yourself.

why not try blackbean sauce or try a couple of starters prawn toast hot and sour soup salt n pepper ribs salt and pepper chicken is nice as a main so is chilli and garlic just give it a go and u will be addicted have a nice meal

If you like spicy, kung pao chicken is very good. It generally has several different types of vegetables and just enough spice to give it a little flavor.
