When I'm talking to people I get/sound really nervous for some reason and talk really fast. I can't control it either..

When young children and most women talk their voices go UP at the end of the sentence. This makes them sound silly and childish. Result stupid people do not listen to the content but only to the sound.
Men, especially radio announcers, go down at the end of their sentences. It sounds honest and knowledgeable even if they are talking rubbish.
Try practicing going down/deeper at the end of sentences.
Physical tip - drop your chin down to make your voice deeper and make it sound more knowledgable.
Also when you are talking fast, pause look them straight in the eye and say to yourself NOT out ALOUD " you silly idiot are you listening to me or just being vain it's your loss. Then, after the pause, continue talking out aloud.
Also shake their hand ( look up 'Power handshakes' on the 'Net')
it's staggering how they listen more after a handshake.

Breath. The Zen Masters taught that all actions stem from breathe. Focus on your breathing: slowly, in and out through your nose. If you can get a rhythm going, your speech will match your breathe. If you hold your breath you jabber on too fast, or sound all wound up like a toy. Breathe. Speak. Breathe. It'll work, I promise.

i used to have this problem and i still sometimes do, i used to especially talk really fast and nervous when i first went to uni, it was really embarrasing!
theres not alot of advice i can really give because you've just got to take your time (easier said..i know!) and unless your talking someone majorly important, what have you got to be nervous about?? so just chill and take your time! you'll be fine!

Why would you need to not sound nervous? It is just a sound.
