I highly recommend the iSkin eVo3 or Claro. I have the eVo3 on mine and it's great. It completely protects the iPod, including the screen and click wheel. It also has a removable rotating clip. The Claro has a slimmer silicon layer than the eVo3, but has a hard outer case that goes around it. The link below has more info on them. You can get them cheaper on eBay. The seller I got 2 from is covercase. They had the cheapest price, so I bought 2(one for mine and one for my girlfriend's).

Get a clear plastic screen guard (a thin adhesive film) to protect it from scratches, first of all.
If you want to protect against moisture and/or possible damage from being dropped on hard surfaces, silicone sleeves are your best bet. They're also better for areas that might produce a lot of dust, as you can take the sleeve off when you get home and clean it by running it under the tap (let it dry completely before putting the iPod back in). Some of these come with belt-clips, and there is even at least one brand that is waterproof if used with the matching brand of underwater headphones. There are a few that are either fully open on the end with the dock port, or at least have a large hole around the port, which is a necessity if you use certain accessories (particularly the Griffin iTrip, which does not clip into the port but extends the full width and thickness of the iPod Video). One thing you'll need to watch out for is that some sleeves have very small openings for the headphone jack, so they might not be compatible with many headphones that are of higher quality than the original earbuds.
If you'd rather go with something that's a little more general-purpose, a leather holster is probably your best bet. They'll look a bit more stylish than silicone, most of them include a full-face flap so no part of the face is left exposed, and most of them include a belt-clip (I've seen at least one brand that has two optional snap-on screen covers, one with a belt-clip and the other without). If you drop it on a soft surface, like carpetting or even wood flooring, leather should provide sufficient protection, but silicone would probably be better on cement, pavement, or rock.
For really rugged use, there are metal clamshell cases with padded interiors. These should be able to provide the most impact protection, but they'll also probably be the most cumbersome to use.
The other major option I've seen is acrylic clamshell cases, but acrylic (which is what the iPod Video's screen is made of) scratches easily and can crack when stressed in cold winter weather. I'd stay away from these.
Regardless, you'll need to remove any of these cases (except the clear adhesive film) before you can use the iPod in anything with a custom-fitted cradle, like a dock, most forms of portable speakers and sound systems, and those odd portable video systems that have iPod sockets.

I got a clear plastic case for mine. You can have a clip on the back or take it off. I like it a lot. You have access to all the buttons and it protects the ipod nicely.

Shieldzone skin
Its invisible. Indestructable and awesome. you don't need a leather case, because it doesn't get scratched either.
