Your eyes get used to seeing the image, so your brain takes a shortcut (it's always taking shortcuts) and leaves the image there so the eye doesn't have to send the same info over and over again. Closing your eyes makes the image appear on your eyelids, which are black, so it is inverted in terms of color.
