If you dream, let's say of going to other countries and meeting people whom you've never met before or perhaps being in a strange home, are our souls really meeting these people and actually going to these places? And if so, do these people actually see or sense us as being ghosts?

Sometimes. It's called Astral Projection and is a real/true out-of-body experience, not a fantasy or a product of one's imagination. And, yes, it is possible you are interacting with people in those places. You may appear in the flesh to some of them or you may appear ghost-like to others--depending on their sensitivity/receptivity. The Astral Plane is a part of the spiritual realm. You have most likely experienced astral projection, also known as astral travel during your dream state. Almost everyone experiences this. It is often remembered as an intense, vivid dream, seeming to be very real and different than the typical dream. Most often it is not remembered. It is possible to consciously induce an OBE (out of body experience/astral projection) with proper instruction and practice. If one becomes skilled in this art, one can travel anywhere through the space/time continuum. This is no joke. Travel safely and Happy Trails!

Amazing question, and one of which I quite often ponder myself. Truthfully I know not the answers you seek, I just wanted to make my first post and sound somewhat intellectual doing so. I have come up with many theories, some reasonable, and some irrational beyond human comprehension. Thoughts go everywhere from, It is purely coincidental that your mind has created a dream world that is relatively realistic and in all actually in accordance to reality is or has been a real place. To explain how you could dream of such magnificent places and not know of their existence until years later could quickly be explained by the fact that you had already seen it in a photograph and were never overly aware of this event. On the far side one could argue that our dreams are merely our reality and that our reality is merely a dream, dreams live forever, dreams last a lifetime, and dreams continue on even after death (Diaries, stories, poems and other physical ways as well as in the thoughts of others whom you have told your dreams to.), you may see someone who has passed on within a dream, their physical life has ended, but they still exist in ones memories and dreams, and perhaps our dream world is a continuation of a reality that once was and no longer is or perhaps never was and never shall be. I seem to be straying from your question but honestly to answer your question I would say it is not our souls that travel to these places but our souls urge to go to that place so much that our souls literally create a world within our head so that we can travel to this place. Just because the people in your dream do exist in reality does not mean that you had gone to the place and met them for the first time, if you are at all familiar with religions ranging from Judaism to Catholicism to Christianity to The Church of Jesus Christ of Latter-Day Saints (Mormon is the more so common nickname given to them.) they all believe that our souls originated in Heaven with out Eternal Father God and that prior to our life on Earth we were all together as one with God meaning that we all know each other in one way or another. Perhaps not consciously nor unconsciously but yet in a more so spiritual manner causing us to both consciously and unconsciously be unaware of our knowledge of such things ... haha I unno im not very intelligent :P
