You are talking about a fictional history written over 25 years ago. They obviously are going to change it and update it as they advance the series. Who wants to see a boring sub-looking spacecraft when the NX-01 looks so much cooler?

The series enterpirse is full of contradictions with the other series. Because of this many trekies don't consider it part of the star trek cannon. The contradictions you mention are just a few of them in one episode they meat ferrengies (I think thats how its spelled) but in a episode of The Next Generation, Enterprise D is suppose to be the first star fleet vessel to meet ferrengies. Th writers of Enterprise didn't study thier star trek history well enough
