As of right now (considering the games that have been released), I would recommend:
Gears of War
A fantastic third person shooter with more focus on tactics and hiding than a lot of other shooters. It features playing the story/campaign mode in coop both splitscreen and over Xbox Live, and also has a popular online deathmatch mode. Playing this game over Xbox Live with a friend is one of my best gaming experiences to this day.
Call of Duty 2
World War 2 based FPS. The atmosphere is unbelievable and the levels are great fun. Also features a popular online deathmatch mode.
Burnout Revenge
A fast paced, adrenalin pumping racer. It's not a racing simulator though, so if you're more into realistic racing games it might not be the perfect match. Personally, I prefer the fast paced action of Burnout.
Condemned
Truly a scary game if there ever was one. It is dark and scary, but still one amazing gaming experience.
LEGO Star Wars 2
A fun kind of platformish game with lots of humor and coop campaign mode. Long lasting appeal and playability - at least for a LEGO fan like myself.
As for other titles, it really depends on what you like. Ie. if you're a big sports fan, there are a lot of budget titles available; I recently picked up both Madden 06, NBA 06 and a couple of FIFA soccer games cheap.
I would recommend to take a look at Metacritic's 360 section http://www.metacritic.com/games/xbox360/ to find several reviews and opinions on the various games.

There are some great games. But some advice, don't go out and buy them 60 or 70 bucks. Go buy them around 40 or 50 bucks and you might save some money to go buy an extra game. And i'm starring you for getting an Xbox 360.

It all depends on what you like. I don't own a 360 but I hear some really good things about Gears of War. It's a first person shooter with some nice tactical/teamwork elements.
I personally don't like FPS games, more of an RPG fan.
For RPG I would go with Fable (it has a couple out there). It has a very dynamic storyline, although short, that evolves around the choices you make.
It's also nice to see a western style RPG sometimes.

if your into the rpg's then elder scrolls oblivion is the best one to get right now. shooting games i would have to say gears of war or one of the call of duty's. lost planet is another good game too if your into action. fable 2 i hear is gonna be good, the sports games look good, i dont play them that much though. need for speed carbon is a great racing game. it really depends on your tastes in gaming.

get gears of war, call of duty 2 and 3, graw, nfs carbon, and dead rising these are pretty much the best games on the consel plus you can try the demos on xbox live market place to see if you like them

If you like zombie bashing dead rising is good, if you like si-fi shooters gears of war is good, if you like WW2 games call of duty 3 is good but a little short.

it depends on what you like,
if you like shooters and stuff get halo and possibly ghost recon,
and get oblivion no matter what cause every one that has an xbox likes it
