Because in some religions/occults/cultures everything is formed by the four basic elements: fire, water, earth, and air.

Each Herb, rock, resin etc. has an elemental "flavor" to it, Based on what it is, where it's from, etc. Example, Dragon's Blood Resin is Firey, and it's ruler is Mars. Frankensense on the other hand is ruled by the Sun but it's still Firey- They both have Fire qualities, such as protection, and are useful in rituals where something needs to be "burned" away. Like wise, Rose is Watery because of it's emotional/love uses.

well. rocks are developed by the earth and herbs grow in soil of the earth.... so thats and earth element.
