It's adrenaline.
Your getting a fight or flight response to stress. The adrenaline causes several physiological changes in the body including accellerated breathing and heartbeat. One of the incidental effects is to shut down the digestive process somewhat - in extreme cases even causing vomiting and evacuation. This assists in a survival situation by reducing weight and energy usage.

The reason is beacuse when you nervous you release stress hormones which change you blood chemistry and where you blood goes to in your body. Example: more blood goes to your lungs to you can breath better to deal with the situation. The reason this affects your stomach is because the blood suddenly surrounds your stomach and this is why also stress effects people with a stomach ulcer.

well, since this was asked under biology and is obviously LOOKING FOR A SCIENTIFIC EXPLANATION..... i think it may be like some nerve impulses reacting to your feelings.

No idea, but aren't they fun? Especially on roller coaster rides, or before (for me anyways) i get to see my husband after training or deployment.. they make me happy :)
