ok so on tests in school and other legal documents it asks if your white, asian/pacific islander, latin and others but why isnt middle eastern one if it is a major population culture in the united states.

Maybe it's not considered its own race. Some Arabs consider themselves White? I don't think they're White though. Do you? Doesn't sound like it.

The US census and government lists them under the category: White.

Because instead of having to list every race and or nationality "OTHER" helps keep that list short and not 12 pages long.
