Because everytime you sneeze your heart stops for a brief moment. That would mean that you would be dead in a way. That means that you have no control over your body, which leads to your eyes being closed.

because it affects all your msucles in your body..even your heart skips a beat..that is why people have the saying of BLESS YOU..to make sure your heart restarts..sorta like good luck. Its just a msucle thing..it can't be helped.
