Hayseed connotes an unsophisticated, rural person. City-dwellers often regard farmers as simple, naive and uncultured.

It could also be a new farmer. When my mom got re-married to a farmer and I moved in with them, he called me "Hayseed" and said it was because I was a new farmer.
