Department of Ed. Most education functions are "locally controlled" with the vast majority of school revenue coming from property taxes, other bond issues, and state taxes assessments and distributions. Along with that, most of the regulations regarding what is taught at schools and how schools function are controlled by the state or the local districts.

The "No Child Left Behind" act changed that a little, giving large grants to states along with the requirement that students be evaluated and improve every year on core subjects. Thus, the regulation has turned a little more national due to the states wanting this big pot of money. Nonetheless, schools are stil mostly local issues.

Department of Justice -- not limited role -- they prosecute all federal crimes (which there are plenty of... not as many as state crimes, but still plentify)

Department of State -- the most expansive role, because the State Department deals with negotiations with foreign countries -- a duty reserved exclusively for the federal government in the Constitution.

Dept of Interior -- somewhat more limited role, but the Interior has jurisdiction over federal lands and waterways, which would be exclusively federal.
