According to the catholic church, it has to do with christ death hour at 3pm the safe hour, and 3 am is when the demons come out?

Don't bars usually close around 2-3 am? You are more likely to be in a car accident (from drunk drivers) around 2-3 am on Sunday morning than any other time. Noon on Sunday is the safest time to drive (all of the drunks are sleeping, & everyone else is still in church).

Traditionally 12 midnight is considered the bewitching hour, according to all of the comic books that I have ever read.

I believe some scholars are of the view that Jesus was crucified at 3:00 P.M. so the polar opposite of 3:00 A.M. in popular culture is considered a darker hour according to some.
