Computer programming. Older versions of basic are freeware. Get a visitior with some command of the language to come in and talk about programming basics. Download and print a list of commands and usage. Show them several simple programs (these are available on the internet, or I have some) then give them a challenge to write a game or a sorting routine.

which soap makes the best bubbles - Do additives affect the bubbles (lotions kill them break up surface tension - sugar does them well)

Which battery lasts the longest. Does temp affect battery life

Do seeds germinate differently - if they have been frozen for a week, heated to 150 for an hour - or kept at room temperatures?

When I was in 7th grade I had a few science projects. One was making a space station out of household objects...nothing could be purchased. Also making a poster of the periodic table or making the solar system were fun too.

Also we learned about solar energy with a shoe box, aluminum foil, coat hangers and hot dogs. We put aluminum foil in the bottom of the shoe box, ran coat hanges through then ends with a hot dog on them. Unfortunately is has to be sunny outside.
